What is Crust Issues?

If you’ve spent any time wandering around Fredericksburg, Virginia, you know this town loves its small businesses. There’s something special about the way locals show up for each other, whether it’s a new brewery, a handmade market vendor, or, in my case, a slightly unhinged grilled cheese pop-up.

So, Who’s Behind the Cheese?

Hey, I’m Erin, the owner (and full-time butter-spreader) behind Crust Issues. I started this little venture as a joke — a “Subway of grilled cheeses” kind of idea — and somehow it turned into a full-blown business. What began as one griddle for a Mother's Day present is now a pop-up that’s feeding crowds at markets and events across Fredericksburg and Central Virginia.


The Origin Story (Because Every Sandwich Needs One)

The name Crust Issues came from a mix of late-night creativity, burnout, and a deep love of carbs. I wanted to build something that felt fun, a little dramatic, and unapologetically nostalgic. Each sandwich on the menu has a personality — from the Crumb to Daddy to the Beige Flag — because food should make you smile before you even take a bite (and I genuinely want to see how far I can push grown men to use these names at the ordering counter).


We set up at local Fredericksburg farmers markets, breweries, and community events, and the response has been unreal. People don’t just come for the sandwiches — they come for the vibe. It’s cheesy comfort food with a sense of humor and a little bit of attitude.


Why Fredericksburg

There’s no better place to build a dream than here. Fredericksburg has this perfect mix of small-town charm and creative energy. Every local business owner I’ve met is hustling, collaborating, and rooting for each other. As a new owner, everyone has been incredibly welcoming of me as well as eager to lend a helping hand when one runs out of propane.


What’s Next

Right now, we’re still popping up around Fredericksburg and Spotsylvania County, but the goal is bigger — a permanent spot where families, friends, and cheese lovers can gather. Think cozy pub energy, loud laughter, and the smell of butter on the griddle.
